Salmon salad



This is a very tasteful, simple and healthy salad. It is quick and easy to make.

Recipe (Serves 2)

Ingredients :

  • 2 Salmon fillets.
  • 1 medium red onion , peeled.
  • Lettuce.
  • Rocket lettuce.
  • Cherry tomatoes.
  • 1 avocado.
  • 2 Oranges.
  • Olive oil.
  • Balsamic Vinegar.
  • Honey.
  • Mustard.
  • Star Anise.
  • Salt, black Peppercorns.

Preparation:

  1. Add enough water to a pan to cover the salmon fillets.
  2. Add to the water 1-2 tbsp. Salt, 1tbsp. Black peppercorns, ½ tsp. Star anise and ½ orange.
  3. Bring to a boil, lower the heat and let it simmer for five minutes.
  4. Add the salmon fillets in the pan, skin down, and simmer for 4-6 minutes.
  5. In a bowl, add shredded lettuce, rocket, sliced cherry tomatoes, sliced avocado, and sliced orange.
  6. Prepare the vinaigrette. Mix vigorously 2 tbsp. Olive oil, 2 tbsp. Balsamic vinegar, 1 tsp. Honey, and 1 tsp. Mustard until well combined.
  7. Drizzle the vinaigrette over the salad, mix to coat all the ingredients and season with salt and pepper.
  8. Place the salmon on top of the salad and enjoy!
