This is a very tasteful, simple and healthy salad. It is quick and easy to make.
Recipe (Serves 2)
Ingredients :
- 2 Salmon fillets.
- 1 medium red onion , peeled.
- Lettuce.
- Rocket lettuce.
- Cherry tomatoes.
- 1 avocado.
- 2 Oranges.
- Olive oil.
- Balsamic Vinegar.
- Honey.
- Mustard.
- Star Anise.
- Salt, black Peppercorns.
Preparation:
- Add enough water to a pan to cover the salmon fillets.
- Add to the water 1-2 tbsp. Salt, 1tbsp. Black peppercorns, ½ tsp. Star anise and ½ orange.
- Bring to a boil, lower the heat and let it simmer for five minutes.
- Add the salmon fillets in the pan, skin down, and simmer for 4-6 minutes.
- In a bowl, add shredded lettuce, rocket, sliced cherry tomatoes, sliced avocado, and sliced orange.
- Prepare the vinaigrette. Mix vigorously 2 tbsp. Olive oil, 2 tbsp. Balsamic vinegar, 1 tsp. Honey, and 1 tsp. Mustard until well combined.
- Drizzle the vinaigrette over the salad, mix to coat all the ingredients and season with salt and pepper.
- Place the salmon on top of the salad and enjoy!
