Homemade vegan energy bar



A homemade energy bar is by far the best snack you can eat. It's healthy, it boosts your energy, it's incredibly filling and it tastes like heaven. You can make awesome no-bake energy bars in no time, using simple ingredients and keep them in the fridge for weeks. So lets go!

Recipe

Ingredients (16 bars):
Each bar is approximately 50 grams and 220 calories

  • 200 gr rolled oats (gluten free if needed)
  • 200 gr of your favorite nuts (almonds, peanuts, walnuts etc.)
  • 50 gr of your favorite berries (cranberries, goji berries etc.)
  • 30 gr raisins
  • 40 gr grated coconut flakes
  • Salt and cinnamon powder
  • 40 gr melted coconut oil
  • 60 gr tahini
  • 70 gr maple syrup
  • Vanilla powder or extract
  • 50 ml almond milk

For the chocolate topping:

  • 40 gr melted coconut oil
  • 90 gr maple syrup
  • Vanilla powder or extract
  • 50 gr cocoa powder
  • 50 ml almond milk
  • Salt and cayenne pepper

Instructions:

  1. Put the oat flakes, nuts, berries and raisins in a blender (or food processor) and roughly break them down into a coarse powder.
  2. Transfer the mixture in a large bowl. Add 40 grams of grated coconut, a pinch of salt, few pinches of cinnamon powder and mix well.
  3. In a bowl (or large cup) add 40 grams of melted coconut oil, 60 grams of tahini, 70 grams of maple syrup, 1 pinch of vanilla powder and 50 ml of almond milk. Mix well to combine and transfer the mixture to the large bowl with our oats, nuts, berries etc.
  4. Use a spatula or spoon to combine both mixtures.
  5. Transfer the whole mixture in a 30x20 cm baking pan with bakery/parchment paper and press it gently with a spoon so it becomes evenly flat.
    Let it rest while we make a chocolate topping for our bars!
  6. In a bowl, combine 40 grams of melted coconut oil, 90 grams of maple syrup and 50 ml of almond milk.
  7. Add 2 pinches of vanilla powder, 1 pinch of salt, 1 tiny pinch of cayenne pepper, 50 grams of cocoa powder and stir until everything is well blended. Our chocolate is ready!
  8. Pour the chocolate over the bars and use a spatula to spread it into an even layer.
  9. Refrigerate for 2 hours, until the bars are firm and the chocolate is set.
  10. Use a large knife to cut the bars into 16 pieces.
  11. Keep them in the fridge and enjoy them whenever you like 🙂
