We'll make a smooth, refreshing and yummy tofu yogurt with fruit. We made it with apple and orange but you can use any fruit you want (banana, pear etc.). Enjoy it as breakfast or afternoon snack 😉
The yogurt is very easy to make and an ideal light meal for vegans. Add nuts for greater nutritional value!
Recipe (1-2 portions)
- 150 gr tofu.
- 4 tbsp almond milk.
- 2 tbsp maple syrup.
- ½ apple.
- ½ orange.
- Wrap 150 grams of tofu (we used silken tofu) in cotton cloth or paper towels. Place it on a table or cutting board and place a weight (1-2 kg) on the tofu. Let it sit for about 10 minutes in order to drain its excess moisture. Remove the cloth (it should be moist from the tofu).
- Combine tofu, fruit(s), almond milk, maple syrup and cinnamon in a blender, until it's smooth and creamy.
- Serve it in a bowl with fruits and a pinch of cinnamon!
